Why I haven’t posted as much and a meal plan!

I know I have not been posting much….I am just in a weird place.

I am NOT in a flare!!!  Yay!  What this means is that most of the time I feel ok, occasionally I feel good, and some of the time I feel like crap.  I am napping less and can be more involved with the family.  I am SO thankful for this because the last 6 months seemed pretty brutal to me.

What I am not happy with is something that is never comfortable to talk about.  But it is part of my journey and I would not be completely honest if I didn’t write about it.

It is that ugly thing no female wants to talk about.  Weight.

For some ANNOYING reason, I am still eating the exact same way and exercising the same amount  and I am gaining weight.  Isn’t that lovely?  While everyone in the room can down meat and cheese and bread, I am over here eating veggies and fruits and nuts and “cheeze,” and yet I am the one gaining weight.  I am now teaching 6 exercise classes a week.  I am not sitting on my butt popping bon bons.

Before you ask, yes, I have been tracking my calories just to make sure I was not 1) eating too much or 2) not eating enough and starving myself.

I go in this week for blood work.  I am getting everything checked.  A month ago I had several lab results come back off.  We are checking those, as well as thyroid, hormones, and many more things.  I pray that this will reveal what is going on.  My body FEELS like I am on prednisone again, only I am NOT!  If everything comes back normal, then I just pray that my doc listens to me about this and helps me keep digging.  I know my body.  Very well.

ON TO OUR MEALS!

  • Sunday: Reid’s bday and he wants egg-in-the-holes for dinner.  I will eat some foods I am practicing for my cooking class.
  • Monday: Tomato soup and grilled cheese.  I now make the tomato soup with only a small amount of olive oil.  HOLY COW, I am CRAVING this stuff again!  I seriously can’t wait!!!
  • Tuesday: Mashed potatoes and cauliflower, served with peppered peas and roasted carrots.
  • Wednesday: Gretchen is making a tomatillo crock pot invention.  YUM!
  • Thursday: Leftovers
  • Friday: pizza night

    I am sorry friend! I pray that you get some answers. I know your honesty is going to help others. Your transparency is refreshing! Here are our plans for the week. We are running the half on Sunday so we are a bit carb heavy I really want to make my goal time.

    Sun-I wanted a low key day at home so Greg is making burrito bowls and cake for my birthday. You would have enjoyed watching he and Jon bake a cake:). So sweet.
    Mon- trader joes tortellini sauce, salad and roasted butternut squash. I am going to make some squash soup for lunch during the week
    Tues- my Greek lentil patties I will double and freeze some for a fast meal some time.
    Wed- the tomatillo bean and rice creation. I hope this turns out with roasted broccoli
    Thurs-probably leftovers or a taco soup
    Fri- pizza night
    Sat- of course it wouldn’t be a night before a big race without pasta. I think I will do a roasted veggie pasta.

        I have wanted to try that recipe anyway. I will run it by Greg. He gets a bit more selective about pre race meals then I do:).

    That has got to be frustrating! Ugh, well it sounds like you are doing everything in your control so hopefully the Drs. can figure something out. 😦 Hang in there mama. You are strong and beautiful and you look fabulous despite whatever the scale says. You know my meal plan… lots of vegetarian dishes this week and leftovers and pizza fridays as usual (never get sick of that one!)

    i feel your pain Britt. my body is very good at gaining weight and maintaining weight, but when i want to drop a few pounds i can reduce my calories and up my exercise for weeks or months before my body gets the point and will let go of the extra pounds. Going vegan has helped a little, but it is still and up hill battle, and it seems like no matter how many healthy choices i make some parts of my body are forever “solid”. i know your issues are much more complicated because of everything going on with your body. i am sorry.

    Sunday- your tortilla soup and GF corn bread muffins
    Monday- pioneer woman’s Asian salad w rice noodles
    Tuesday-leftovers
    Wednesday-we are going to cooking class, kids will have pancakes, bob’s red mill GF mix
    Thursday- spagetti squash topped with roasted Brussell Sprouts and eggplant

    Made the asian salad for the first time 2 weeks ago and to my surprise R. loved the dressing!! i love when i see a glimmer of hope for my kids’ taste buds. i am making it this week per his request

      So annoying, right? Especially as hard as we both work! Oh well..as you and I both know, there are much bigger problems in life!

      I am so glad you like the tortilla soup! I can’t wait to make it again. And I love that he likes PW’s Asian salad. That stuff is RIDICULOUS! Makes my mouth happy!

      I am telling you, the kids WILL come around. All of the things my kids used to rate a 1 or 2 are now becoming 5’s and 6’s! Way to go!
