Well, it has been one full year of eating lots of crucifers, no animal, and a general boatload of veggies! I am AMAZED as I stand at one year through this natural journey at how much better I am right now than I was a year ago. It is UNBELIEVABLE that veggies are doing what meds couldn’t do!
The past few weeks, I have been having regular fever and sores in my nose and general fatigue. But overall, I am out of that long flare and am enjoying a little more of life!
I haven’t mentioned fibromyalgia on here yet. But I had a horrible bout with fibro pain in May, June and early July. I have my suspicions why. Here is the short of it: antidepressants can stop the fibro pain for some people. I got off my antidepressant in May. It wasn’t until late June that I read about the connection. And all of the sudden the horrible pain I was in made perfect sense. I probably have had fibro all along, but the antidepressant was masking it. And my body was going through withdrawals, which caused the extreme pain. It has been VERY mild since early July. I am thankful for that and waiting for my doc to squeeze me in to discuss it all.
MEAL PLAN! (Does this help anyone? Should I stop?)
This week, we are tightening the budget belt. So I am trying to stick to eating what we have and buying less expensive foods.
Sunday: Squash and potato hash browns , roasted broccoli, fresh fruit, and I am going to make fresh juice!
Monday: Roasted sweet potatoes with Nutritious Eat’s chimichurri, green beans from our produce co-op, and fresh fruit.
Tuesday: Pad Thai (made with gf soy sauce and no egg)with Asian slaw (modifying with scant amount of oil and sugar and adding crucifers in the form of broccoli slaw) for us and Hokensons.
Wednesday: Vegan quesadillas (bean and cheese for kiddos) with slaw for me.
Thursday: Salad bar and leftovers
Friday: Pizza night!

Sat- rice and beans

I like the meal planning. Gives good ideas for go to vegan meals. It is difficult changing your whole go to meal options. I would love you to post ( you probably have…so again). The research sources behind why you do what you do. For those of us who are newer on our journeys. I need to research what if any other changes I will make with my diet due to the confirmation of Hashimoto’s. Btw congrats on one year in to your striving for health. So thankful you can see improvements. I am coming up on one year mainly plant based in October. Here is our menu for the week. We begin football on the first so free time eludes us until November, oh what we do for our kids.
Sunday- pasta with left over meat sauce ( for the kids) and vegan pesto for me.
Monday-potato chive pancakes with fruit and broccoli
Tuesday-pad Thai:)
Wednesday-crockpot black beans and rice for burrito bowls
Thursday-eggs for Greg and the kids, tofu scramble for me.
Fri-burritos or quesadillas with left over beans
Sat- pizza if our oven is installed or crockpot baked potatoes.

Congrats Brittany! That is such a huge accomplishment! Re meal planning, I was wondering the same thing because I have been doing it for a while now and there still isn’t much commitment except from you, me and Gretchen (and Dana) and now I am going to ask my readers tomorrow on the blog.! 🙂 I suppose even if it’s only helpful to me, it’s worth doing. For example, I took this week off from planning and as a result we had 3 separate “bean” dishes!
I love seeing your plan…it gives me ideas and honestly, helps me to feel confidant in my meal plan. I like seeing how you also have leftover nights and easy meal nights and pizza nights. 🙂

Friday- hummus and veggie wraps
Saturday- veggies on the grill, i could eat a moutain of these!!!
I love your plan for today. Better than mine. I actually made the chimichurri and sweet potatoes and green beans and added in broccoli…but my sweet potatoes were rotten. Bought them yesterday, too. When we tried to taste them they were NOT good. So I made quinoa quickly and we had quinoa, green beans, and broccoli! So glad my family thought nothing of it and ate normally. Will your kids eat hummus for those wraps? Mine won’t :(. Tell me about those Greek fritters!!!
My kids do not eat hummus yet. Probably pb & j for them. We have to eat on the road friday night. L’s camp pick up is at 5pm R’s ( @ another camp, in another city ) is 7:30. The fritter were good , but contained tofu & took a while to make. I just need to expand our vegan horizons. Thanks for all you do, you are awsome!!!

Please dont stop posting your menus! It really really helps me! I hope to start posting mine soon! As you know, im struggling with fibro. And for me, the hard part abt eating plant based is that the rest of the family isnt (yet!), so… But am determined to persevere & get the rest of the fam on board (at least for most meals). I am slowly working on crowding out their plates & replacing snacks! So appreciate you sharing!
