Banana Bread

Here is a recipe I modified to be gluten free.  Folks, give it a try.  Don’t think that b/c it is gf, it is any less yummy!  To me, it has the nutrition of whole grain but not the wheaty taste.  I love it! Hope you, do, too!  Let me know if you try it and like it!

2 cups oat flour (you can buy it or grind your oatmeal EXTREMELY fine)

1 1/2 tsp baking powder

1/2 tsp baking soda

1/4 tsp Kosher salt

1/2 tsp cinn (I don’t measure and prob add a bit more than that)

1/4 tsp nutmeg (same as above)

2 eggs, beaten

4 mashed bananas

1 cup turbinado sugar or evap cane juice or white sugar, if you must 🙂

2 tsp vanilla (or more!  just eyeball)

1/2 cup coconut oil

Preheat oven to 350.  Grease loaf pan.  Combine dry ingredients in a large bowl and make a well in the center.  Combine eggs, banana, sugar, vanilla, and oil.  Fold in to dry mixture.  Poor batter in to bread pan.  Bake for an hour or until toothpick comes out clean.  Cool for a few minutes on a rack in the pan. Then take it out and cool on a wire rack as long as you can handle it!   The flavors are definitely more defined and better if you let it cool.  But who can wait?!?!  Enjoy!
