Super Snack Sunday!

That is right!  It is that time of year again where we get to eat only snacks for dinner!  And watch funny commercials!

I know so many of you are wanting to eat healthfully and yet still enjoy life.  Here are a few ideas I have for Super Snack Sunday!

Spiced Chick Peas

I took 2 recipes and merged them to make this one, that I think is pretty stinking perfect!

2 can chickpeas (garbanzo beans)

1 T olive oil

2 tsp. ground cumin

1 tsp. ground coriander

2 T. ancho chili powder

1/2 tsp. smoked paprika (my new favorite spice!)

1/2 tsp. ground cinnamon

1/4 tsp. ground cloves

1/4 tsp. ground ginger

1/8 tsp. cayenne pepper

large pinch of kosher salt

(I actually didn’t measure any of these….you can truly do whatever you want!)

3 lime, juiced

Preheat oven to 350 F.

Drain garbanzo beans into a colander and rinse well with cold water until no more foam appears. Let beans drain for 5-10 minutes, then pat dry with a cloth of paper towel if they still look wet.

While beans drain, make spice mix.

When beans are well drained and dried, arrange in single layer on baking sheet. Roast 30 minutes.

Take them out and toss with olive oil, spice mix, and lime juice from only 2 limes.

Return to the oven and bake 20 -30 minutes more or until they are slightly browned and make a rattling sound when you shake the baking sheet.   Take a few out, let them cool a bit.  Taste them.  If they are CRUNCHY  (like corn nuts), then they are ready!  If not, put them back in.  Be prepared to babysit these at the end. You don’t want them soft at all, but you don’t want them burnt. Trust me, it will be worth your effort!  When they are getting close, add the juice of one more lime.  Toss ’em, and finish cooking.

And then these are yummy and healthy, too!  Don’t tell your kids anything other than you are letting them eat cookie dough!!
